We create our sweet jewel like chocolates by first crystallising citrus fruit in sugar syrup combined with liqueur or alcoholic spirit and then dipping them in dark chocolate. Our crystallised fruit is available in strips of peel or slices of the full fruit dipped in chocolate and our selection includes orange and lemon.
To add warmth and intensity to the flavour of the fruit we add to the poaching syrup an alcoholic spirit or alternatively an orange or lemon flavoured liqueur. We recommend Whisky, Port or Grand Marnier, as all of these compliment the fruit beautifully.
Due to the crystallisation processes involved we normally need between 3-5 days in which to create this item.
Fresh fruit peel, water, golden caster sugar, liqueur or alcoholic spirit, dark chocolate.
Orange fruit available with Whisky or orange flavoured Grand Marnier Liqueur. Lemon fruit available with Port or lemon flavoured Grand Marnier.
